Crunchy Greek kale salad.
What you need:
Purple kale
Cherry tomatoes
Cucumber
Red onion
Feta
Mint
Moroccan cured black olives
Day old rustic bread
Lemon
Olive oil
Seasoned rice wine vinegar
Honey
Salt
Pepper
What you need to do:
Tear large pieces of bread, toss with a drizzle of olive oil and toast in a pan until crunchy. For dressing mix olive oil, vinegar, lemon, honey, a pinch of salt and pepper in a bowl. Thinly slice kale, add to a bowl along with halved tomatoes, diced cucumber, olives and paper thin slices of red onion. Crumble feta and add it to the bowl as well with torn mint leaves. Add croutons and toss with dressing. Enjoy!
